
The twist of lime in this elegant cocktail gives a nod to the Emerald Isle. The splash of Champagne and lemon juice lightens a drink which might otherwise be heavy with the rich weight of Irish whiskey.

Lady Irish cocktail
Ingredients
- 2/3 oz Bushmills Irish whiskey or other blended style
- 2/3 oz Oloroso-style sherry see note
- 1/2 oz Spiker’s Berry Amour Raspberry Bergamot, Sour Cherry Plum, orVery Strawberry shrub
- 1/3 oz fresh lemon juice
- 2 oz Champagne chilled
- 1 fresh lime twist
Instructions
- Fill a cocktail shaker with ice. Add all of the remaining ingredients except the Champagne and the garnish and shake well. Strain the drink into a large chilled coupe and top with the Champagne. Garnish with the red currants.

Note: Oloroso sherries, made from Palomino grapes, are by default dry, amber- to mahogany-coloured with pronounced nutty fragrance and flavors. Cream sherry, Amoroso, and Brown sherry are different styles (in terms of sugar content) of PX-sweetened Oloroso.)
