When the first colonial merchant ships sailed out of Newburyport Harbor, many journeyed to the Caribbean where their holds were filled with tropical fruits and spices (and also rum).
According to the legend, captains would spear a pineapple on a fence post outside their homes to let friends know of their safe return from sea. The pineapple was an invitation for friends to visit, share food and drink, and listen to tales of the voyage.
Even though pineapple is not a locally sourced fruit, it is so anchored in our local history that it made sense for us to create a “shrubbed” version as part of the Spiker's family.
To make our Pineapple Shrub, we macerate sweet pineapple chunks with a fine chiffonnade of fresh sweet basil which imparts subtle notes of spicy, sweet, anise, and clove without hitting you over the head the way each spice would if blended together. We think you will welcome the refreshing result: a zippy green note which balances the sweet-acidic profile of the pineapple.
