Mocktail Monday: Ginger Tarragon Grapefruit Spritzer

Steamy days are on the immediate horizon, so be prepared. If you’re looking for a snazzy thirst-quencher, try our latest mocktail: a tarragon infused spritzer featuring two Spiker’s shrubs: Grapefruit and Ginger Bite.

We discovered the beautiful pairing of grapefruit and ginger last month by happenstance. But recently, our friends at Cornerstalk Farm at the Boston Public Market tipped us off that tarragon and grapefruit have a natural affinity. So …. we set out to craft a mocktail with this unbeatable summer trilogy. Grapefruit provides citrus tang, ginger adds warmth and cooling, and tarragon lends a minty, anise-like taste and fragrance.

The Latin name for tarragon is Artemisia dracunculus. Literally, “little dragon.” But you won’t be breathing fire when you sip this fizzy blend. Goes down cool, keeps you cool.

Ingredients
  • 2 tsp fresh tarragon
  • 1 ounce Spiker's Ginger Bite Shrub peeled
  • 2 ounces Spiker's Grapefruit Shrub
  • 1/2 cup water
  • 1 green tea bag or 1 tsp loose green tea
  • 6 oz seltzer, soda, or mineral water

Instructions
  1. Coarsely mince the tarragon -- stems and all.
  2. In a small saucepan, heat the water to just below boiling. Remove from heat and wait one minute to allow water to cool to approximately 185F. Add the tarragon and green tea. Cover and allow to steep for 5-10 minutes.
  3. When the tarragon-tea mixture is completely cool, strain through a fine-mesh sieve into two highball glasses. Press the sieve to extract as much tarragon essence as possible.
  4. Add 3-4 ice cubes to each glass. Add one ounce of Spiker's Grapefruit Shrub and a half ounce of Spiker's Ginger Bite Shrub to each glass. Top off with fizz and lightly stir. Serve with a few small sprays of tarragon on top.
